Each step of its journey is carefully crafted to preserve and enhance its character:

  • Step 1: Mature cherries are manually selected for peak quality
  • Step 2: Dry pulping followed by oxidation in plastic bags for 24 hours
  • Step 3: Submerged fermentation for 60 hours, with temperatures carefully monitored between 30 and 33°C
  • Step 4: Cherries are washed to remove mucilage and impurities, ensuring a clean, vibrant cup
  • Step 5: Finally, drying in marquesinas for 5–12 days under controlled temperatures, depending on weather conditions.

 
The result is a coffee with an exquisite balance of tropical vibrancy, citrus brightness, and comforting sweetness, offering a taste that lingers with elegance and complexity.
